
Hosting a party or event means making a number of decisions; everything from seating to lighting and the guest list must be decided on prior to the event. Another important aspect of party planning is deciding what to serve your guests; you can offer a buffet or a sit-down dinner. Many less formal events offer a buffet option for guests because it makes for easier mingling and more options for each guest. However, you may be tempted to forgo the idea of a buffet simply because you are concerned with keeping hot items hot on the buffet table. Use chafing dishes to keep your hot appetizers hot. Pick them up at any party store or kitchen store prior to your party. Chafing dishes will keep your food hot as long as they are heated, which depends on the size of the burner on any particular chafing dish.
2Fill the chafing dish water tray with water; the tray must be completely full for the best results.
3Place sterno liquid in the cups situated beneath the chafing dish and light them. Position the opening of the sterno cups so that they are halfway open.
4Place the hot appetizers in the chafing dishes and set the dishes on top of their respective warming trays. Check the sterno liquid every hour and a half to see if it needs a refill. All hot foods are safe to serve in a chafing dish or warming tray, provided the temperature is constantly at or above 140 degrees Fahrenheit, which is why it is imperative you make sure the sterno liquid does not burn out before you have a chance to refill it.
